Our Class Schedule

In the table below is most of the information you might want about our classes - the date the class will be held, the city in which the class will be held, the name of the class and a more or less brief description of the class. If you click on the name of the class, you'll be taken to a more complete description of the class. In addition to our scheduled classes, we also do retreats and workshops, at your facility or ours.

To register for one of our classes, just select the number of people you want to have attend a class and press the "Add to Cart" button. You can return to this page and add as many people to any class you would like. When you have added all you want, you can use one of the "View Cart" buttons to return to PayPal and pay for your classes.If you want to pay with a credit card, PayPal is our credit card processor, and you do not need to have, or create, a PayPal account to pay via credit card.

If you prefer not to deal with PayPal, you can use the " Contact Us " page and send us an email. Tell us which class you want to be in, how many will be in your party, and how to contact you.

If there are no classes shown below, we haven't scheduled any classes for the immediate future. We try to schedule about 3 months in advance, though that doesn't always happen. If you'd like to be automatically informed of our upcoming classes, you can use the box to the left to receive an automatic notification when this page changes. We also have a mailing list that we use to send weekly baking tips amd class announcements.

Saturday, January 14 Introduction to Sourdough Sanger, Tx

This isn't just an introduction to sourdough, it's also a great introduction to grb bread baking! In this totally hands-on class you'll make three different sourdough breads, as well as sourdough pizza for lunch.

We really like all of our classes, but this has a special spot in our hearts. For more of a class description, you can go to our class description page.

This will be first time we are offering our restructured class. Our wildly popular 4 hour "Back To Bagels" class has shown us how to get the class down to 4 hours.

We'll start by baking a bunch of sourdough bread that Mike prepared before class. You'll learn about oven preparation, steaming the oven, loading the oven, scoring the loaves and more! As the bread bakes, we'll make sourdough pizza dough. Then we'll make and shape bread dough for you to take home to bake later in the day. Then we'll finish shaping, topping and baking the pizza. As we do all this, Mike will explain how sourdough works, how to care for sourdough, and how to use sourdough to make great bread.

At the end of the 4 hour class, you'll go home with bread you baked at the start of the class, the loaves of bread you made that you'll bake after you get home, a sourdough starter of your own and a copy of our very popular "Introduction to Sourdough" cookbook.

Saturday, February 11 Home Ground Whole Grains Sanger, Tx

Our whole grains bread class is a perfect followup to our Introduction to Sourdough class. wwheat1 There are special considerations for sourdough, and there are special considerations for whole grains. Although all our whole grain breads won't be sourdough, we'll focus on how well sourdough and whole grains work together. In this totally hands-on class, you will make three different whole grain breads, using sourdough for at least one bread and yeast for one other.

We'll also grind the flours for our breads in class and talk about what we need to do to make good breads from home ground flour, and how to get good grains to grind our own flour.

Using the scheduling tricks we learned in our wildly popular "Back To Bagels" class, we'll do all this in 4 hours and have a whole grain lunch together!

We'll start by baking three batches of bread Mike prepared before class. You'll learn about oven preparation, steaming the oven, loading the oven, scoring the loaves and more! As the bread bakes, we'll start prep work on our whole grain lunch - probably a whole grain pizza (or maybe a whole grain focaccia, and we'll prepare three whole grain bread doughs. We'll shape the dough into loaves, and then cover them. At that point, we'll top and bake our whole grain lunch. All during class, Mike will explain the special needs of whole grain breads and will be there with you as you build your dough!

At the end of the class, you'll take home the three loaves of bread you baked at the start of class, the three loaves of bread you'll bake at home, any lunch leftovers, and your own copy of our Whole Grains Breads cookbook. If you need a sourdough starter, you can have one of those also!

The pace is quick, but hardly punishing.

Saturday, March 10 Mastering Flavorful Breads Sanger, Tx

The baker's job is to unlock the flavors in the ingredients. Many people think you have peel
to add seeds, or cheeses, or nuts, or other things to bread to make it flavorful. While those breads are fun, a plain bread can be very flavorful! Using techniques developed in the mid to late 1800's, you'll master making flavorful breads! In this 4 hour class, we'll bake a round of breads at the start of the class. Then we'll start making our great focaccia for lunch, followed by making the dough for three flavorful breads. We'll form the loaves, and then have lunch. You'll take the dough you made home to bake in your oven. The class will be about 4 hours of active fun that will help you move to the next stage of bread baking.

How many will be attending Mastering Flavorful Breads?
Saturday, April 14 Gluten Free Baking Sanger, Tx

In this gluten free class, we will make two breads, biscuits and a pie using gluten free grains. We'll discuss how to make breads that taste like breads, breads that feel like bread in your mouth, and how to do this with ingredients you can get locally. Because these breads rise quickly, we'll make and bake our breads in class, and still get out of class just after lunch. You can see more about the class here.

If you have food issues beyond gluten intolerance, please let us know so we can plan lunch appropriately.

This is the first time we are offering this class, and we are really looking forward to it. This class is normally $100, but our web special price is just $75.00.

Saturday, May 12 Steak House Rock Sanger, Tx

The first hints of summer are hitting Texas in May, and it's the start of the summer steak season. Many people think they have to go to a steak house to get the steak house experience. The good news is that you can have a GREAT steak house experience at home.

We'll cover it all - selecting a great steak, three ways to cook a steak, how to tell when the steak is done, how to make fantastic side dishes, what wines to serve, what desserts to make, timing the meal preparation, what music to play, even how to set the table.

As always, this is a hands on class, so you'll cook the steaks, make the side dishes, and then we'll have lunch. You can see how the different ways of cooking the steaks change what's on your plate. Lunch in this class is definitely NOT an afterthought! This class is normally $100, with a web special price of just $75.00. Our accountant is URGING us to raise the price on this class, so this may be the last time the class is offered at this price!

June means peaches and other fresh fruits are hitting the stores! And one of the best things to do with the bounty nature blesses us with is to make pies! We'll make three different kinds of pies ranging from simple to elegant. We'll make a gluten-free pie crust as welll as a covnentional crust.

And then, at the end of the class, we'll have a pie party. This class is one of the most fun classes we offer - what's not to like - three pies to enjoy with coffee and home made ice cream. This class normally costs $100, so make sure you take advantage of the web special price of just $75.00!

Some people seem to think of our Bagel class as some sort of religous observance. And that's bagel1 OK with us. Many times what you get from something depends on what you bring to it.

But all we're trying to do is to teach people to make bagels. REAL bagels. The way they used to be made in New York City, before monied interests broke up the New York Bagelmakers Union and bagels became the soft, fluffy, overly sweet, textureless and bland things they have become.

We want to tech you to make bagels with a deep rich flavor. Bagels that are CHEWY! Bagels with a crisp crust. Bagels that are dense enough that you really don't want to drop them on a bare foot. We'll also teach you how to slice them safely. A fuller description of the class can be found here.

We'll start class by baking and eating bagels. A regular bagel party. Then we'll make and shape bagel dough for you to take home to boil and bake the next day. At the end of the 4 hour class, you'll go home with bagels you have baked, bagel dough to boil and bake the next day, and our very popular "Back To Bagels" cookbook.

Many people make breads with the "Big four" ingredients all their lives - flour, water, yeast and salt - and never jazz it up. It's true, you can make a nearly endless variety of great breads with just the big four, but there is life beyond the big four. However, when you buy breads with extra ingredients in them, all too often the bakers don't make good breads, and they hope the bits of salami or garlic will make up for the breads deficiencies.

We don't do that! If the bread isn't great, why bother? Here are some of the breads we've made in this class - Pepper belly - a jalapeno-cheddar bread that will kick you in the booty; Garlic head - a garlic cheddar cheese bread that will definitely protect you from vampires; New Mexico Green Chili bread - rich with green chillies, parmesean, tomatoes, herbs and spices this bread will have you wanting more; Italian appetizer bread - a great appetizer stuffed with salami, provolone cheese, garlic, onions and more!
